BEEF STIR FRY and FRIED APPLE & ONIONS RECIPES
Yesterday I had my son over for supper and just had some left-overs from Monday's supper.
This is what I made:
BEEF STIR FRY
Ingredients:
1 lb hamburger/beef..........1/2 cup of frozen corn
1 cup water..........................2 cups of cooked rice
1 cup frozen beans............salt
1 stick of celery..............cayenne pepper
6-8 baby carrots................1/2 - 1 tsp powdered ginger
1/2 onion
At medium heat, fry hamburger or if you prefer sliced beef continually stirring until browned, then add water, frozen green beans, onion cut up in 1/2" pieces, celery & carrots thickly sliced & frozen corn; bring to boil and barely cook with the lid on (no more than 10 minutes). When they are somewhat cooked, turn burner to medium high and add rice and stir-fry until the water evaporates. Sprinkle salt, cayenne pepper till it tastes good and last of all powdered ginger(this also needs to be according to your taste).
While you are cooking the above veggies below is the fried Apple & Onion you can cut up and start frying. Once the ingredients are put in pan to fry, you probably want to add the rice and stuff to the above and stir both recipes alternatively.
FRIED APPLES & ONIONS

Ingredients:
1 medium onion
1 medium sweet apple
2 teaspoons of honey
1/2 - 1 tsp of curry powder (depending on taste)
1 tbsp of butter/shortening
Melt butter/shortening in small to medium pan at a medium heat. Into preheated pan, put 1 inch cubes of cut onion. Cut apple in segments and cut off peels and seeds. Then cut in approx. 1 inch chunks and also throw in pan. Stir. Add honey and sprinkle 1/2 tsp of curry and fry until onion is transparent stirring occasionally. Taste. If you think it needs more curry then add it until it tastes to your liking.
When both recipes are done, quickly make a salad to accompany the meal and serve. It should feed about 4 people with the salad.

Yesterday I cooked this excellent recipe that I made up with some white fish--I can't think what kind it was, but was it good!
INGREDIENTS:
Frozen White fish ....Salt
Stewed tomatoes ......Pepper
Onion ................Italian Seasoning or Oregano
Celery ...............Marble Cheese
I preheated the oven to 400 degrees Fahrenheit and put 4 pieces of frozen deboned fish on a glass baking pan. Then I spread about 1 cup of mashed stewed tomatoes, from the can, onto the fish. Next I thinly sliced 1 stick of celery and 1/2 of a medium quartered onion on top of the tomatoes. This was seasoned with salt, pepper and Italian seasoning. If I didn't have Italian Seasoning, I'd have seasoned it with oregano. Last and not least, I sliced some marble cheese about 1/16 of an inch thick and totally covered the top. After baking it for about 3/4 of an hour, I took it out of the oven and served it with these delicious scallop potatoes from Safeway's and mixed veggies.
WHAT A MEAL! The fish NICELY took on the flavor of the additions.

PS If you are going to cooked thawed fish, only bake for 20 - 30 minutes, depending on thickness.
