For me, crepes are just milked down pancakes with no leavening with an extra egg. Here is how I make them:

Ingredients:

1 cup of flour (white or brown)
1/4 tsp salt
1 tbsp brown sugar or none for unsweetened
1 tbsp oil
2 cups of milk
2 eggs

Put out a bun plate. Preheat 6 inch Teflon pan or cast iron at med high. (I prefer cast iron)

In a medium bowl, mix dry ingredients then put a hole in the middle and break the eggs in. Stir the eggs until they are well mixed avoiding the flour mixture. Stir in the oil to eggs, then add milk in portions stirring the wet ingredients with the dry. I prefer using one of those whippers or a mixer. When everything is combined and there is no lumps, add a tiny bit of butter/margarine to the pan so it just coats it. Then pour about a quarter cup of batter in the pan and tilt it until the bottom is coated VERY thinly with batter (if it doesn't spread very well, stir into batter a TINY bit more milk). When the batter has just dried on top after spreading into the pan, flip it and cook for for maybe 5-6 seconds. Put on plate and pour some more (melt butter on pan as needed) . When the batter is completely used up, you can serve approx. 4 people - each individual 4 - 5 rolled up crepes.

Pour on a big spoon of Chilli-Con-Carne and a bunch of shredded cheddar/marble cheese on top.

Crepes (and pancakes) can be made up to a month before they are needed.
Cook them, stack them – layering them with wax or parchment paper, put them in a freezer bag and freeze. Pull them out of the freezer, let the crepes thaw until they are soft, then they are ready to roll!

The filling choices are only restricted by your imagination. Crepes can be for breakfast, lunch, dinner or dessert, and they can be made with either sweet or savory, hot or cold fillings. Use them anytime as they are very versatile!

***Heat frozen pancakes (if they aren't to big) in the toaster.
